Finally zeroed in on this very easy Broccoli Soup Recipe from BBC – Food (the link to recipe is no longer working). Some people don’t like the flavour of broccoli and prefer to avoid and you would think this Broccoli Soup has a strong flavour of broccoli but it actually doesn’t. I encourage you to try it even if you are a broccoli-disliker, this soup may just win you over.
BROCCOLI SOUP RECIPE
Serves 4
Ingredients:
Broccoli – 2 cups, chopped (discard the thicker part of the stem
Vegetable stock – 4 cups
Garlic – 3 to 4 cloves, chopped
Olive oil – 1 tbsp
Salt and pepper – to taste (freshly ground pepper makes a lot of difference to the taste)
How to Make Broccoli Soup
1. Heat the oil in a pan and saute the garlic till it turns a light brown at the edges.
2. Add the stock and the broccoli, bring to boil and simmer for 25-30 minutes. The broccoli should be cooked at this point.
3. Blend in a mixie / blender and serve hot with some salt and pepper.

i make my stock from scratch but this seems a quicker option…
Suma – I got it from Cold Storage. Its a company called BG, a red can like Milkmaid (which I struggled with my knife to open cuz I don’t have a can opener yet!) It was nice and thick-ish and has no added salt. I had to add salt to the soup and 1 can served both me and TH.

Broccoli is my kids’ especially Agastuya’s favourite veggie :-)your hubby’s right…try to make it like aloo gobi…I make a mixed vegetable with broccoli, carrots and potatoes and it’s one of our favourites…your soup looks nice too. We also have it just steamed.

broccoli almond soups are a rage at fancy weddings in my hometown in India…tried to replicate its taste but failed miserably…since then i just stick to the ones available on menu in the cafes.

The original recipe called for some cream to be added in the end. I avoided it since I am not a huge fan of creamy soups except maybe as an appetizer. This was our dinner, with some crackers and toasted bread so I made it light and we had lots! 🙂
Cheese is definitely another great option. The recipe is versatile enough for you to customize it as you want!
