Well, I know these pancakes are not really the Brad Pitt of pancakes but they come together in 10 mins, and are eggless. So, stop being shallow. After all, the rustic look is in these days. The more dilapidated-looking the plywood for for your food photo base, the better. Haven’t you noticed?
Btw, you do need some maple syrup to serve these up because they aren’t super sweet on their own. Of course, you can add more sugar to the batter but why would you. Pour on the maple syrup (or the ones that masquerade as maple syrup, your choice). I got the real deal in US this time and its worth every gram of the weight I had to lug back.
Eggless Blueberry Pancakes Recipe
Prep + Cooking : 10 mins
Serves: 1 (about 3 medium-sized pancakes)
Ingredients:
1/3 cup plain flour
1/3 tsp baking powder
A pinch of baking soda
1 tbsp sugar (adjust to taste)
A pinch of salt
2 tsp olive oil
1/3 cup + 2 tbsp milk
1/4 cup blueberries (fresh or frozen)
2 tbsp butter to spread on pancakes while cooking
How to Make Eggless Pancakes
1. Mix all ingredients together (except for the butter).
2. Heat a pan or griddle and spread some butter on it. Pour about 1/3rd of the batter into the centre of the pan and let it spread naturally. Keep the fire on low.
3. When small bubbles start to appear on the pancake surface, drop some blueberries on the pancake. I used about 5-6 per pancake. Flip over gently. Don’t press down hard on the pancake, otherwise the blueberries will burst and create a mess. Handle very gently and always keep on low flame, otherwise the edges will burn like one of my pancakes did.
4. Cook for another minure or two and transfer to a plate.

Just want to make sure the 'flour' that you used is "All Purpose/ Wheat" flour? Sorry if I sounded stupid. Consider me newbie in the field.. 🙂

haha thanks for that 🙂 and your question is not silly at all. i used whole wheat pastry flour for these eggless pancakes but you can definitely use all purpose flour (maida) too

These pancakes will work fine without eggs….i love them!even though i haven't tried them i know eggless-pancakes work pretty well with leavening agents and milk alone!

The main volume of your pancake batter is flour and milk. If someone's new to this, its just going to taste like flour and milk and some leaveners to make it rise. People should try the recipes before giving misleading raving comments.

Ok you are just being nasty for the sake of being nasty. Here's why I think that:
– your problem is flour and milk being the main ingredients in pancakes. Ok that's fine. But seriously, apart from adding eggs to this list, what else will pancakes have? That's what pancakes are made for! Since this is an eggless recipe, I added more leaveners to make it edible. This is an option for people who don't eat eggs, so if you do and you don't like leaveners, then use eggs by all means. If you don't like flour and milk playing the major role in something, then maybe this pancake is not your thing.
– You have a problem with people leaving "misleading raving comments" without trying the recipes. You have used plural here – recipes. I am not going to address that because I am going to assume you meant this one. If you notice the comments above, everyone is talking about how they love bluberries or blueberry pancakes or how my pancakes look delicious. They are not necessarily raving about the recipe. The one person who does rave about it is Joey who has actually tried it! So he (or she) is allowed to rave, right?
So what exactly is your problem here? Just having a bad day?

I love this. Made this for breakfast today with strawberries and also added nutella also to the batter. Further, i served it with condensed milk. Truly a to-die-for breakfast. Thank you.
